Kerasopita (Cherry Cake) with Cream Cheese Frosting

I bake a lot and usually what I do is infuse whatever fruit is in season. This time it’s cherries and apricots and soon there will be peaches, my favorite. Just wait till you see my peach cobbler, to die for!!

What you’ll need for this cake:

1 kg. pitted cherries
400 g flour
3 tsp. baking powder
pinch of salt
4 eggs
300 g sugar
1 cup butter
160 ml milk
vanilla and zest of 1 orange

Sift the dry ingredients together. In another bowl mix the butter with the sugar and then slowly add everything else, except the cherries. Fold the cherries in at the very end, keeping a few aside. Once the mix has been added to the cake pan of your choice take the leftover cherries and sprinkle them with sugar and then add them to the pan. In about 40 minutes the cake was done (180 d/C oven) and it smelled absolutely divine. I personally can’t have cake without frosting and seeing that there was cream cheese in my fridge I figured why not use it as frosting. I am a cream cheese girl 🙂

For the frosting:
2 8oz. pckgs. cream cheese
1/2 cup butter
2 cups powdered sugar
1 tsp. vanilla

Mix and spread on top of completely cooled cake.

    • :-)It is delicious!! You should try it because except for having to go out and buy a cherry pitter, everything else is your ordinary cupboard ingredients that everyone has, super easy super yummy!!
